You Can Accomplish This Before Your Effing Head Explodes: Nearly Um Orgasmic Cabbage

So winter CSA. . .it’s a LOT of cruciferous vegetables. . .and potatoes.

Let’s not forget the potatoes.

So.  Many.  Potatoes.

I need a freaking plan for the potatoes people!!

The rest of it?  I have a blissfully simple idea.  It’s fresh, clean, yummy. . .

If you’re all “new year’s resolution-ary” or aspiring to get some more diverse veggies in your family’s dinner rotation this is worth a try.

Take your pick of any raw, cruciferous vegetable:  kale, cabbage, cauliflower, broccoli, turnips, carrots, slice thinly (or grate) and dress with some olive oil, freshly squeezed lemon juice, pepper, salt.  (If you are trying to “sell” this to kids, set some aside and add some honey to the mix.)

Allow the veggies to soften in the dressing overnight.

So.  So.  Good.

Had a huge red cabbage and some turnips from our CSA this past week.  I used the aforementioned recipe and we ate it with BBQ pork AND fish tacos.  Damn tasty.

Now, if only I could get the kids to eat ANY. DAMN. THING. I. COOK.

Seriously, they will eat ANYTHING I don’t prepare.  In any environment OTHER than our home.  Then they scream for apples and bananas before bed.
