You Can Accomplish This Before Your Effing Head Explodes: Chicken and Waffle Cheat

I don’t make this often because it’s not the healthiest of dinner options.  But it’s kinda’ a nice hot comfort-food that you can prep pretty fast – although it requires a longer cooking time.

This is NOT what we’re having for dinner this evening (sorry, Husband).

And I haven’t made it in a while so I don’t have any crappy cell phone photos to share.  The shame.

THE CHICKEN & WAFFLE CHEAT

Here’s How:

1.  Get some chicken parts.  I typically use chicken thighs.  They stay more moist while cooking (because I tend to forget I’m cooking and over-cook things) and they aren’t that much worse in terms of fat and so forth than a breast.

2.  Remove the skin and excess fat from the raw chicken.  (Gross).

3.  Place the chicken in a crock pot or cast iron dutch oven or roasting pan.  Cover the chicken with canned mushroom soup and cover the cooking dish with foil or lid.  (We use the Progreso Brand soup.  It seems less congealed with more whole, better textured mushrooms than other brands – although the sodium content is still pretty high regardless.  (So don’t salt the chicken before cooking!)

4.  Cook chicken on a low temperature for an hour or more – until the chicken is very tender and pulls off the bone very easily.  (Obviously cooking times will vary depending on crock pot v oven and amount of chicken, etc.

5.  Just before dinner, steam some fresh broccoli and toast some whole grain frozen waffles.

6.  Place a waffle on the plate along with chicken and broccoli.  Top with a little of the mushroom “gravy.”
