You Can Accomplish This Before Your Effing Head Explodes: Nectarine Salad

Most days I start preparing our dinner sometime about 6:30AM.

Insane, no?

But we like to exhaust the kid err do things as a family in the evenings and if I didn’t have dinner prepped ahead of time, we likely wouldn’t eat until 9PM.  As it is now, we aren’t typically done with dinner until about 8 or 8:30.

So my favorite foods are those that are healthful and easy to assemble after a long day.  This salad works perfectly.

Here’s How:

1.  In the early morning prep your ingredients:

a.  Chop about half a red onion into slivers.

b.  Chop about 3 pretty ripe nectarines into thin-ish half moons.

c.  Thaw a couple of cups of super-sweet white corn.  (You could use fresh corn but I’m pretty lazy and getting out the huge pot to boil corn is a pain – especially when the frozen white corn tastes so good anyway).

d.  Prepare or thaw a couple of cups of brown rice.  (I cook rice in big batches when I have time and freeze it in individual portion sizes so meal prep is faster).

e.  Cook some chicken. . .any part of the chicken you like, cooked any way you like.  Or steak, beans, shrimp, or pork – pretty much any protein would work.

2.  Pack up the ingredients and store them in the fridge.

3.  Before dinner, open a bag of mixed baby greens/arugula or similar and assemble salads using the lettuces and previously prepped ingredients.

4.  Top with balsamic dressing. . .Blue cheese would probably be a nice addition too.

DONE.

    I LOVE tips like this! I am a dinner pre-preparer, too (Does that make sense? Haha), but it’s mostly because we love to eat at 4:30 or 5 PM. I shudder to imagine what time I’ll eat dinner when I’m 85…like at 2 PM??

      When Mac was younger, we also ate at 4:30 or 5! I ALWAYS need a plan. . .mostly because I am ALWAYS eating. Ha!
