You Can Accomplish This Before Your Effing Head Explodes: Dirt Sandwiches & Fries

I know.  It sounds horrible.  I started calling these things “dirt sandwiches” (Actually, I think the original was a dirt pita) because nearly every ingredient is grown in the dirt and my Husband thought it was kinda’ funny so the name stuck.  I promise you, they do not contain nor do they taste like dirt and the ingredients are easily substitutable.

Here’s how:

1.  Grab a can of beans – any kind will do.  I typically use Cannelini or Black Beans because I like their texture best.  Drain and rinse the beans.  Place in a mixing bowl and mash them along with a drizzle of olive oil and some salt and pepper.  I use a potato masher but a fork will work too.  You can mash until you reach the desired consistency.  We like ours a little chunky.  (You could also use store-bought humus).  Set aside.

2.  Cut up some veggies – lettuce, onions, peppers, tomatoes, avocados, sprouts, etc. and arrange on a plate.

3.  Pick a cheese.  Either shredded or sliced.

4.  Pick a condiment or five:  salsa, mustard, mayo, etc.

5.  Pick a “bread.”  Pitas, whole wheat bread, tortillas, english muffins whatever you prefer.

6.  Preheat over to 400 or 425.  Take several sweet potatoes and cut them into wedges.  Clean them well but leave the skin on (extra fiber!).

7.  Arrange the wedges on a baking sheet – one layer only and spray or drizzle them with olive oil.  Add a little sugar (or brown sugar), salt, and pepper.

8.  Bake potatoes until they are lightly browned and reach the desired crispness.

9.  Allow everyone to assemble their own Dirt Sandwich with the various ingredients/toppings and serve with sweet potato wedges.

It doesn’t get any easier than that.  And I DARE anyone not to LOVE a baked sweet potato wedge.
